At Pasta Via, we believe great food should be fast, accessible, and uncompromising in quality. Founded by lifelong friends Billy Fogel and Chef Gino, Pasta Via is the realization of a dream they first envisioned as roommates over 10 years ago. Chef Gino, a Chicago native with deep Italian roots, brings generations of tradition to every bowl. Our fresh pasta is handcrafted daily by his family business, Pasta Fresh, using just two simple ingredients—including premium semolina flour imported from Italy—and contains no preservatives or processed additives. By combining authentic Italian craftsmanship with the convenience of modern fast-casual dining, Pasta Via delivers fresh, flavorful pasta made with clean ingredients, no seed oils, and served in minutes. Known for his culinary innovation and dedication to quality, Gino is the proud owner of Gino & Marty’s, a luxury Italian restaurant on Randolph Street in Chicago’s West Loop, renowned for its sophisticated dining experience. In 2024, Chef Gino took his talents internationally, further solidifying his status as a global culinary figure. With his passion for fresh, clean ingredients and authentic flavors, he continues to redefine Italian cuisine. Now bringing the same excellence to Pasta Via—where gourmet pasta meets convenience.
